Best Banana Bread Recipe!




Is there one thing that makes you think of summer? Because for me, it's spending days on the beach, having a picnic and all of the above including Banana Bread! This recipe is suited to me very well because I like bananas, but only ones that don't have the brown spots on. I suppose they don't really have that iconic banana taste because they aren't ripe yet but that's how I like them! So, this recipe is great because it uses up old, overripe bananas. This recipe is my mums recipe as the only one who can make it just right is my mum! So with her permission, I am here to show you the most amazing banana bread recipe.

     Ingredients:
  • 200g of self raising flour
  • 1/4 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 75g butter
  • 125g sugar
  • 2 eggs
  • 450g bananas


To start, grease and line an oblong loaf tin and sift the flour, bicarb and salt into a bowl. Then cream the butter and sugar together until pale and fluffy and add the egg a little at a time, beating well after each addition. (its really helpful to have everything at room temperature because it means everything can incorporate properly and your batter won't split)

Mash the bananas in a separate bowl (we usually don't measure 450g of bananas we just use however many we have) and add those to the mixture along with the sifted flour salt and bicarb. Make sure you fold these in instead of beating to ensure the air stays in the mixture.

Now put the mixture into the lined tin and pop into a preheated oven at 180℃ or 350℉ for around an hour and a quarter. If you haven't used a loaf tin you will want to leave it in the oven for a shorter time so make sure you keep an eye! Remember you can add any additional ingredients if wanted. We really enjoy sultanas or chopped apricots but the recipe suggests chopped walnuts so I thing anything will work!

Now the recipe suggests leaving it to rest for 24 hours before eating but that usually never happens in our house because everyone loves it!
