A Lonely Girls Banana Bread for One.

Picture this... You've just devoured a bowl of popcorn for breakfast while binge watching episodes of Reign and you fancy something else to destroy this weeks streak of healthy eating. But the sensible part of you knows that if you make anything that is more than one serving, it'll turn into something that serves one, even if it's meant to serve 15. (i'm telling myself that walking the dog later will make up for all of this) Well, why not trick yourself like what I'm doing and make something in a little portion. (I know it's not the same type of satisfaction knowing that you have managed to devour a serving size bigger than a football team but it's better for you in the long run) Here is a recipe I have been using for a while now to satisfy my baking needs and my sweet cravings.



You will need ;
  • 1/4 cup + 2 tbsp plain flour (32g + 2 tbsp)
  • 1/4 tsp baking soda/powder
  • 1/4 tsp ground cinnamon
  • 1/8 tsp salt
  • 1 banana (mashed)
  • 2 tbsp granulated sugar
  • 1 tbsp melted butter
  • 3 tbsp egg (crack and beat an egg, then take out 3 tbsp and use, for me this ended up being the whole egg but it's different every time)
  • 1/2 tsp vanilla extract

Method

  1. Pre-heat the oven to 180℃ or 350℉.
  2. Mix flour, salt, baking soda and cinnamon together and set aside.
  3. In a separate bowl, mash the banana and then add the sugar and whisk it together, it should turn a lighter colour.
  4. Add the melted butter, the egg and the vanilla to the banana mixture and mix those thoroughly.
  5. Add in the dry ingredients until they are just mixed through. We do this so that we get a fluffy cake in the end result rather than a tight, tough and close cake for the end result.
  6. Pop that bad boy into the oven and set a timer for 30 minutes.
  7. Remove from the oven when the timer dings and set it aside to cool a little before serving.
